I did a poll of whether you guys like when I post recipes and I got…100% yes! So I decided to post my super quick, healthy and easy recipe I came up with last night!
BARBEQUE TURKEY STUFFED PEPPERS WITH ROASTED POTATOES
This is simple guys, I promise!
Ingredients:
- 3 Peppers (I prefer red or orange because they are sweet but you can use any kind)
- 1 lb ground turkey
- 2 cloves garlic (or whatever amount you prefer)
- Barbeque sauce (I used Sweet Baby Ray’s)
- Handful of small Potatoes or three large potatoes
- 2 tablespoons Parmesan cheese
- Olive oil
Steps
- Add Olive oil to a frying pan and turn up the heat to medium. My stove is electric so that’s a little over halfway to get the perfect temperature.
- Add garlic and saute for 5-ish minutes until you can smell it.
- Add the ground turkey and cook until all the pink is gone.
- While the turkey is cooking, preheat the oven to 420F and cut potatoes into small chunks.
- Toss in a little bit of olive oil to coat them and place on cookie sheet.
- Once the oven is ready, put the potatoes in for ~25 minutes or until tender using a fork.
- Cut peppers in half and scoop out seeds.
- Once turkey is cooked, add barbeque sauce. I did about 2 tablespoons but you can add it to your liking.
- Scoop turkey into each pepper half and cover with some parmesan cheese
- Pop into the oven with potatoes as they are at the end of their cooking time and allow cheese to melt!
- Take it all out and devour it!
Seriously, a super simple meal that fills you up! You can add more things to the turkey filling and change up the sauce and cheese for other options!
