Earlier this week, I think on Sunday, I put a story on Instagram of an easy peasy pasta salad I was making for lunches during the week! Well since then, I have received so many direct messages and text messages from people asking for the recipe! So here we are! The Chic Chemist’s first recipe blog!!! Bare with me for this one as I have not even thought about ever writing a recipe so don’t judge.
Here we go!!
I am a huge huge fan of taking whatever is in my pantry and coming up with a yummy meal for Michael and I. This week was the pasta salad, next week we will be able to find something else so make sure you stay tuned!!
Throw It Together Pasta Salad
Ingredients:
1 box pasta (I used gluten free elbow noodles)
1 can chickpeas
1 cucumber
1 green pepper (you can use a different color it’s really whatever you prefer)
1 package grape tomatoes (or 1 medium sized tomato)
- Cook pasta based on whatever the box says. Don’t forget to salt and oil your water to give it that extra flavor!! I used the gluten free pasta because I really enjoy the flavor and it doesn’t give me a rash.
- While the pasta is cooking, chop the cucumber, pepper, and tomatoes to your liking. I wanted larger chunks of veggies so i did a loose chop. Add these veggies to the bowl of your choice. Pick a bigger one that fits your pasta!
- Drain the pasta and run it under cold water to cool it down. Add it to the veggies in the bowl.
- Toss the pasta salad!!
- Add whatever dressing you like!! I did the Green Goddess from Trader Joe’s.
If you are looking for more flavor, you can add red onion and feta cheese to go down the Greek route. Or you can do cubed swiss and sliced pepperoni for an antipasto feeling!
I do suggest putting the dressing on each individual portion rather than the whole thing so the pasta doesn’t end up getting too soggy.
